- 4 pieces of round of leg meat
- 1 tsp. salt
- ½ tsp. black pepper
- 1 tsp. coriander
- 1 tsp. cumin
- 1 tsp. cardamom, crushed
- 1 tsp. curcuma
- 1 tsp. paprika
- 4 tbs. ALKHAIR Olive Oil
- 1 large onion, cut into slices
- 1 large carrot, chopped
- 2 sticks celery, chopped
- 3 bay leaves
- 1 tsp. oregano
- 2 cups water
- 1 large red bell pepper, cut onto slices.
- 1 large yellow bell pepper, cut onto slices.
- 1 large green bell pepper, cut onto slices.
- ¼ cup parsley, chopped
1- In a small bowl, mix salt, black pepper, coriander, cumin, cardamom, curcuma, paprika.
2- Sprinkle some spices on meat and rub well.
3- In a wide saucepan, heat ALKHAIR Olive Oil, add meat simmer for several minutes until its color changes
4- Take meat out of the pan and put aside, add onions, carrots, celery, bay leaves and oregano. Sauté until ingredients get smooth, then add the remaining of spices and meat pieces.
5- Add water and cook meat.
6- Take meat out of stock, discard bay leaves, and reserve stock.
7- In a wide saucepan, heat ALKHAIR Olive Oil, add bell peppers and sauté for several minutes.
8- In a blender mix sauce until it become smooth
9- Add sauce over bell pepper. Boil until it become thick. Add parsley and mix well.10- In a platter, place bell pepper sauce then put meat and serve hot.
